Ingredients:
4 medium size zucchini
2 tablespoons of olive oil
1 teaspoon oregano
1 teaspoon basil (dried)
1 teaspoon thyme
1/2 cup shredded parmesan
1 cup shredded mozzarella
1 cup pizza sauce
1 package pepperoni (I used turkey pepperoni, a little better for you)
Directions:
Pre-heat oven to 350 degrees.
Slice zucchini in half lengthwise. Using a melon-baller, ice cream
scoop, or strong spoon – scoop out the inside of the zucchini and set
aside.
Place the chopped zucchini back in the bowl and add the olive oil,
oregano basil and thyme. Then add 1/4 cup of parmesan and mix
together.
Drizzle a small amount of olive oil along the scooped out zucchini and
then layer the bottom of the zucchini with pepperoni.
On top of the pepperoni, add the pizza sauce, then the uncooked zucchini
mixture, and the rest of the cheese evenly distributing among the zucchini.
In the oven for about 30 minutes.
