Anyways my awesome husband got me the cookbook for Christmas and I was excited to try something out of it. I came a crossed Daphne Oz recipe for Dorm room chicken chili! I do have to say I really enjoyed it and so did my husband! My kids on the other hand were not impressed with it. They would rather have chicken nuggets.
If you give it a try let me know what you think of it! I also think it would be good for super bowl party!
Ingredients:
2 tablespoons canola oil
1 large yellow onion, chopped
4 cloves garlic, smashed
4 boneless, skinless chicken breast, diced
salt
pepper
2 medium zucchini, diced
1 8oz bag frozen corn, thawed
2 tablespoon tomato paste
1 16oz can of roasted tomatoes, chopped
1/4 cup chili powder
2-3 tablespoons cumin
2 bay leaves
2 tablespoons oregano
1 chipotle pepper in adobo sauce, chopped
2 15oz cans kidney beans, drained and rinsed
1 15oz can black beans, drained and rinsed
1 12oz bottle beer
1 cup vegetable stock
Shredded cheddar, to serve
1 Avocado, chopped, to serve
Fresh Lime Juice, to serve
Sour cream, to serve
Directions:
1. In a large heavy pot, heat the oil over medium-high heat. Add the onion and garlic, and sauté until translucent. Season the chicken with salt and pepper, and add to the pan, cooking for 2 more minutes.
2. Add the zucchini and corn, and sauté for 5 minutes, stirring occasionally, Add the tomato paste and the roasted tomatoes, including the juice. Then add salt, pepper, and all the herbs and spices. Stir well. Add the chipotle pepper and beans.
3. Add the beer and vegetable stock until liquid covers all ingredients in the pot. Bring to a boil, and then reduce heat to medium-low. Summer for a half hour, stirring occasionally. Remove from the heat, and adjust seasonings to taste.
4. Ladle into bowls and sever with Cheese, avocado and fresh ling juice or sour cream.
NOTE: You can also put this in your slow cooker too!
